The Amarena was “invented” during the 1920′s by Rachele, Gennaro Fabbri’s wife. Nobody could ever imagine that the bittersweet wild cherry in its syrup would have become the symbol of the company today.
Wild cherries, to become “Amarena Fabbri,” need to be fresh and crunchy and have a standard dimension. The final selection of every single Amarena cherry is still done by hand. Only the best Amarenas are candied through a secret process that even today, more than 80 years later, gives the same exquisite result.
