San Giacomo Balsamic Vinegar

Acetaia San Giacomo, located in the Reggio Emilia region of Italy, is where Andrea Bezzecchi oversees the production of aged balsamic vinegar.  With great respect for the tradition and strict adherence to the true methods of production, the San Giacomo line is the true balsamic. 

The balsamic begins with only one ingredient, the cooked grape must of  local Lambrusco and Trebbiano grapes.  The grape must  is cooked over open fire, and traditional wooden barrels of decreasing size and of different types of wood are used for the aging process.

Acetaia San Giacomo has been recognized for their superior quality and pure line of balsamics.  Essenza, their eight-year balsamic was awarded the silver sofi in 2011.
